Ingredients

2 Pork Tenderloin
6 each Mozzarella Cheese ( slices )
1 Bag Baby Spinach ( fresh )
Roasted Red Peppers
Meat Church BBQ Holy Cow
4 tbsp Extra Virgin Olive Oil
3 Clove Minced Garlic
1 cup Chicken Broth
1 cup Heavy Whipping Cream
1 cup Grated Parmesan Cheese
1 tsp Red Pepper Flake
1/2 tsp Thyme
1 tbsp Oregano
1/3 cup Sun Dried Tomatoes

Steps

Prep Pork Tenderloin

Take your Swift Meats Pork Tenderloin and remove any silver skin. Butterfly it open and pound it flat.

Stuff and Roll

Add your Mozzarella cheese slices, spinach and roasted red peppers. Roll the tenderloin up nice and tight and tie it in a few places with butches twine.

Season and Smoke

Season the tenderloin with MeatChurch Holy cow. Place on smoker at 350F

Marry Me Sauce

On medium heat add your Oil and garlic. Cook for 1 minute until it becomes fragrant. Add the chicken broth and heavy cream and stir till incorporated. Add grated cheese and stir until cheese is mixed in. Add the rest of your ingredients and let simmer until the desired thickness

Finish

When the pork tenderloin is cooked (approx 45min - 1hr) when the IT is 150F, pull it off and slice it up. Pour over the Marry Me sauce and Enjoy!
