Quick Pickled Carrots and Daikon

Bahn Mi style Pickled Carrots and Daikon Radish
Ingredients
1 cup Carrot
1 cup Daikon Radish
1/2 cup Distilled White Vinegar
1/2 cup Rice Vinegar
1 cup Water
1/4 cup Sugar
1 tsp Kosher Salt
Steps
Julienne Vegetables
Julienne your carrots and daikon and place them into a 16oz mason jar.
Make the Pickling Liquid
In a pot mix your vinegars, water, sugar and salt. Heat until the sugar and salt is dissolved. Pour into mason jar over the veggies and place in fridge for 2 hours.
