Street Corn Tailgate Dip

This dip is so easy to make and will be THE favorite dip at the tailgate. I guarantee it!

Ingredients
8 Corn
2 Cream Cheese
1 Bottle Mexican Crema
8 oz Colby Jack ( Shredded )
4 oz Green Chili
1/2 cup Cotija Cheese
2 Lime Juice
1/2 Bunch Cilantro
Steps
Grill Your Corn
Fire up your grill to high heat! De husk your corn and grill it! We are wanting to get some char on the outside for flavor.
Cut the Corn
Once grilled, cut the corn off the cob and into a bowl.
Make the dip
Add all the other ingredients into the bowl and mix. Only use half of the cilantro and cotija cheese, the other half will be used for garnish
Smoke
Smoke the dip for 30 minutes at 350F mixing it about half way.
Garnish and Devour
Pull the dip from the smoker, top with the remaining cotija cheese and cilantro. Watch it disappear
